I accidentally spilled soda on my honeycomb mouse right on the buttons and internal components. I immediately disconnected it, but I'm wondering if it's safe to plug it back in or if I should just let it dry overnight. Is that enough time for it to dry, especially since it was soda?

If soda got into the honeycomb parts near the DPI button, it's good to be cautious. Let it dry for at least 1-2 days if you can. I spilled coffee on my GPU once and waited two days, and it survived without issues! It might feel like a long wait, but it's worth it for peace of mind.
You should definitely let it dry for a full day before plugging it back in. If it still feels sticky afterward, you might need to open it up and clean the switches with some Q-tips dipped in rubbing alcohol. It’s unlikely that you’ll have permanent damage, but better safe than sorry!
Just a heads up, if your soda was sugary like Coke, the mouse might not completely recover. I got a little Coke in my keyboard and no matter how much I cleaned, two keys still stick. Luckily, they’re not critical keys, but if it’s your mouse clicks, you might end up needing a replacement after a couple of days.

I turned it upside down and got some soda out, so that’s good!
