Is there any wasted potential in my build? Any tips or advice you have would be hugely appreciated. My goal is to run games at 1080p and a minimum of 60fps.

For your budget, there are ways to modernize your build with a newer motherboard, an updated cooler, and a current-gen GPU. This setup could easily run most games at 1440p with 90fps+, depending on your settings. But if you're strictly aiming for 1080p at 60fps, you could save some cash and build something good for around $1000 with either AM4 or LGA1700 components.
Honestly, you shouldn’t be too worried! Your setup is perfectly capable of handling 1080p at 60fps for sim racing. If you're looking to future-proof it a bit, consider upgrading to a stronger GPU like an RTX 3060 or RX 6600 XT.
