I'm looking for some advice on which CPU to pair with my 7700XT. Should I go for the Ryzen 7 5700X or the Ryzen 5 5600? I'm on a budget of around 150 euros and I'm located in Poland, so cost is definitely a factor. Are there any other AM4 socket CPUs I should consider?

In my region, the 5700X is significantly more expensive, and honestly, for gaming, the performance difference isn't huge. I chose the 5600 because it works great for the price. If the price difference in Poland is only about 30 euros, it might be worth the upgrade to the 5700X depending on what you plan to do with your setup!
Both the 5700X and 5600 are solid picks. The main difference is that the 5700X has 8 cores compared to the 5600's 6 cores. If you're planning to use the CPU for more than just gaming, like video editing or streaming, the extra cores on the 5700X could be beneficial. Otherwise, if it's primarily for gaming, the 5600 should be more than sufficient.
