I recently bought a Fun60 Pro keyboard advertised with an 8,000Hz polling rate, but its software doesn't provide a way to change that setting. I'm wondering whether the high polling rate can noticeably increase CPU usage, reduce gaming performance, or cause stuttering. I've seen conflicting opinions, and my system uses a Ryzen 5 5600. Is this something I should be concerned about?

Polling-rate issues can depend heavily on the game and system. Some older or poorly optimized games may stutter with very high input polling, but that’s more commonly reported with 8,000Hz mice. If your games are smooth, there’s probably no reason to worry.
High polling rates are much more likely to cause problems with some mice than keyboards. If you want to be certain, compare your games with another keyboard and watch CPU usage and frame-time graphs while typing or moving around.
An 8,000Hz keyboard generally shouldn’t cause a noticeable performance hit on its own. The amount of input data from a keyboard is much lower than from a mouse, so the CPU overhead is typically negligible.
