I'm planning to play Elden Ring with an i5-12400F, one 32GB DDR4 stick, and an RTX 5060 Ti. I've found plenty of benchmarks, but most don't say whether they used single- or dual-channel memory. Will this setup run the game smoothly at maximum settings in 1080p with ray tracing disabled?

Yes, that hardware should handle Elden Ring at 1080p without much trouble. The 5060 Ti has plenty of graphics performance for this game, especially with ray tracing turned off.
You should be completely fine, even with the 8GB version of the 5060 Ti. The 16GB model gives you more breathing room, though.
That setup should also be capable of 1440p in Elden Ring, so 1080p is well within its range.
The single 32GB stick will work, but dual-channel memory would be better. Compared with two sticks, you may lose roughly 3–5% average performance, and the 1% and 0.1% lows can be noticeably worse. It should still be perfectly usable for modern games, but adding a matching second stick later would be worthwhile.

I went with the 16GB version.
