I'm looking to repurpose my old Ryzen 5 3600X along with 32GB of DDR4 RAM into a small form factor NAS machine. I've been watching a lot of videos about building NAS systems and want to know if it's really as straightforward as just getting a motherboard, power supply, and storage. My main goal is cold storage, but I'd also like to include some hefty hard drives and maybe set it up for Plex to rip my DVD collection. Am I missing anything important, or is it that easy?

You'll definitely need a small GPU since the Ryzen 3600X doesn't have integrated graphics, especially if you want to do video transcoding for Plex or Jellyfin. That'll help with streaming just fine.
