You can actually run a hypervisor on a bare metal instance in AWS. So, yes, technically you can set up an ESXi or AHV on a bare metal instance, but keep in mind it’s not the typical use case.
It’s generally not recommended to run a hypervisor on top of another hypervisor. You're entering into the realm of a nested hypervisor, which can lead to performance issues. If you're looking for a solution within AWS, you might want to consider using VMware Cloud on AWS instead.
