I'm wondering if I can run four 16GB sticks of DDR5 RAM with my AMD Ryzen 5 7600X using Expo settings, or would it be better to keep Expo off?

Typically, running four RAM modules means you might not hit the full speeds advertised, especially with AMD setups. If you already own the 4x16GB sticks, that's one thing, but for optimal performance, consider switching to two 32GB modules if you haven’t bought them yet.
AMD's guarantee for DDR5 is that it can run four sticks at 3600 MHz max. If you are hoping for higher speeds, you might have to manually tweak things; aiming for around 4800 MHz could be possible, but don't expect to reach the RAM's rated speeds easily.
