I recently got an RX 9070 XT graphics card, but my new power supply unit (PSU) only has one PCIe port. I'm curious whether I really need to connect all three PCIe connectors on the GPU, or if I can manage with just the one.

You definitely need to connect all three ports on the RX 9070 XT to ensure it gets enough power. Using just one won't cut it; that card requires more juice than a single cable can provide. What's the model of your power supply?
If your PSU only has one PCIe cable, check if it has a 12V-2x6 connector that can feed into two 8-pin PCIe cables. If that’s the case, use it to fill the other two ports. If you can't find any more cables, you might have a used PSU that’s missing parts, or it's an underpowered model, so consider replacing it if that's the case. You need that proper power to avoid issues!
Just using one cable is not enough for the RX 9070 XT. You should check what kind of PSU you have. Is it sufficient for the power needs of high-end cards like this?

Oh, good to know! It does have that connector, thanks for the tip!
