I just upgraded my CPU setup from AM4 to AM5, and my new motherboard for the 9800X3D features a 16-pin power connector. My previous PSU only has 8-pin cables for the CPU, and I'm unsure if I should connect both 8-pin slots on the new board. Is there a way to purchase the 2x8-pin connectors separately, or can I just use one?

Yeah, just hook up one CPU 8-pin connector and leave the other one empty. That should work perfectly fine.
You only need to plug in one of those 8-pin connectors. It's more than enough to power your 9800X3D.
It only really matters if you're using a Ryzen 9. Those CPUs can draw more power because they have more cores. But for now, with what you have, one connector will be enough.
Just to add a bit more info, the second 8-pin connector is mainly for extra power if you're planning on overclocking. If that’s not your thing, one 8-pin will definitely suffice.
