I inherited an older desktop from my grandfather and want to turn it into a basic home server. It uses a Gigabyte GA-B75M-S motherboard with an LGA1155 processor, and it already has two SSDs installed for the operating system and general storage. I also have several additional hard drives I'd like to install. What should I check or upgrade to connect them safely? The power supply is a 500W non-modular unit, and I noticed at least one badly damaged SATA power connector with a Molex-to-SATA adapter attached.

First check how many unused SATA data ports are available on the motherboard and how many SATA power plugs are coming from the power supply. The board may have enough data ports for a few more drives, but the power connectors are a separate limitation. If you run out of motherboard SATA ports, a compatible PCIe SATA controller can add more. Also make sure the drives have proper mounting and airflow.
Do not use the visibly mangled SATA power plug. Damaged contacts can cause overheating, intermittent drive failures, or a short. Molex-to-SATA adapters can work when they’re well made, but cheap versions are notorious for loose or poorly crimped connections. Replace the power supply with a reputable unit that has enough native SATA connectors rather than building a chain of questionable adapters.
Before buying hardware, open the case and count both types of connections: SATA data cables from the motherboard and SATA power leads from the PSU. You’ll need one of each per drive. If there aren’t enough data ports, use a quality PCIe SATA card; if there aren’t enough power leads, use a proper rated splitter only after confirming the PSU can handle the total load. Test each disk individually and check its health before using it for important server data.
Photos of the inside would make it easier to identify the ports and cables, but the damaged power connection should be dealt with first rather than adding more drives immediately.

A 500W rating by itself doesn’t tell you whether you have enough connectors or whether the supply is still safe. Count the plugs and check the label, but an old non-modular PSU with damaged connectors is worth replacing before adding several drives.
