Would using a single 32GB stick cause noticeable performance problems, or would the lower price make it worthwhile? I may also want to upgrade to 64GB later.

If that €180 price is genuine, buying two individual 32GB modules could be the best value: you’d get 64GB for around €360, which is cheaper than the quoted 32GB kits. Just make sure the seller has two modules available and understand that separately purchased sticks aren’t guaranteed to be perfectly matched, even if they have identical specifications.
A single stick will work, but it runs the memory in single-channel mode, which can reduce performance compared with two modules. The difference depends on the game or application: GPU-limited games may only lose a few percent, while CPU-sensitive titles can see a larger drop. The 7800X3D’s large cache can reduce the impact, but it doesn’t eliminate it.
