I'm considering buying the RTX 5060 TI 8GB since it's currently on sale for 329€ (down from 450€), but I've heard mixed reviews about it. I currently own a GTX 1660, and I'm a bit uncertain if I should make the switch, especially with some negative opinions I've seen on TikTok. What do you think? Is it worth it for that price?

Generally, the 8GB version isn't recommended these days. Modern games are starting to struggle with 8GB of VRAM. If you can find a deal on the 16GB version, that would be a much better choice for future-proofing your system.
8GB of VRAM just isn't cutting it for most current and upcoming games. If you're not in a hurry, you might want to hold onto your GTX 1660 a bit longer. Consider upgrading to a card with 12GB or 16GB when you get the chance.
