I'm currently using a Pentium G630 with a GeForce GT 630. It's definitely an old and modest setup, but I mainly play Minecraft and don't plan to do a major upgrade for a while. Would an Intel Xeon E3-1230 v2 be a good, affordable upgrade, or is there another compatible processor that would offer better value without costing much?

The Xeon E3-1230 v2 would be a major improvement over the Pentium G630. It has four cores and eight threads, making it similar to an older Core i7. Just confirm that your motherboard supports Ivy Bridge Xeons and has the appropriate BIOS update before buying it.
For a temporary budget upgrade, look for a used card such as an RX 570, RX 580, GTX 1060, or GTX 1650, depending on local prices and the condition of your power supply. The RX 570 and RX 580 can draw considerably more power, so the 420-watt unit needs to be a decent-quality model with the required power connector. A GTX 1650 is usually safer for a weaker supply because it uses much less power.
It’s probably the best performance upgrade available without replacing your motherboard. An i7 from the same generation may offer similar performance, but often costs more for only a small difference. For Minecraft, the Xeon should be more than adequate, although the GT 630 will remain the bigger limitation in many games.
I’m also using a non-modular 420-watt power supply and will be moving soon, so I don’t want to spend much on a full upgrade yet. If I eventually replace the GT 630, what inexpensive graphics card would be a reasonable match for this system?
