I'm building a high-end PC for gaming and video editing and would prefer to keep using Windows 8.1. I don't want Windows 10 or 11 because of their bundled software and AI features, and I'm not interested in macOS or Linux. A lower-end graphics card would be acceptable if necessary, but I specifically want a brand-new component rather than used hardware. There really isn’t a practical modern, brand-new GPU choice for Windows 8.1. The operating system has been unsupported for years, and current graphics cards, games, motherboard chipsets, and other hardware generally target Windows 10 or 11. Older cards such as the GTX 1080 Ti may have drivers that work, but finding one genuinely new would be extremely difficult and expensive—and most available units are used.
AM5 is a poor match for Windows 8.1. Even if you could get the OS installed, you would likely run into missing chipset, USB, network, storage, and graphics drivers. Newer games and editing software may also refuse to run. Windows 11 with unnecessary features disabled, or a properly debloated Windows installation, would be much more realistic.
Windows 8.1 has been out of security support for a long time, so using it on an internet-connected enthusiast system is a serious security risk. If avoiding bloat is the main concern, it would be safer to use a supported Windows version and remove or disable the features you don’t want rather than building around obsolete hardware and drivers.
