I have Sennheiser HD 560S headphones and a 500 BAM microphone that I really like. My PC is too far away when I play from the couch, but I'd like to keep using this setup. Is there a wireless adapter with a 3.5 mm connection for the headphones and a USB dongle for the PC, ideally with very low latency for gaming?

The simplest solution may be a headphone amp or DAC such as the FiiO E10K paired with a long extension cable. It won’t be wireless, but it should avoid latency and compatibility issues.
A Bluetooth adapter that supports a low-latency codec, such as aptX Low Latency, could work. However, Bluetooth gaming performance depends on both the transmitter and receiver supporting the same codec, and microphone use can reduce audio quality or increase latency.
There are professional wireless systems designed for this kind of setup, but they’re usually quite expensive. Cheaper Bluetooth transmitters and receivers are more likely to introduce noticeable delay, so there isn’t always a great middle-ground option.
A direct wireless headset system would probably be cleaner than converting the analog headphone and microphone signals separately, but it may not let you keep the exact equipment you already own.

That might actually be worth considering if I can find a clean way to run the cable.
