I've found a good deal on the 9850X3D and I'm considering upgrading from my current i5 14600K. I have an AM5 motherboard ready to go. Do you think this upgrade would make a significant difference in gaming performance, or should I stick with what I have?

One thing to keep in mind is that while your gaming performance will improve, multitasking could be tougher on the 9850X3D. For instance, my brother has a 9800X3D, and he struggles with RGB software crashing while gaming, which I don't experience with my setup.
If you're aiming for high refresh rate gaming (like 200 FPS or more), then yeah, you might see some gains with the upgrade. But if that's not your goal, the difference won't be that noticeable right now.
Just remember, don't buy just because it's a good deal. Make sure you actually need the upgrade; otherwise, save your cash for something that will enhance your experience more.
It's also worth noting that if you're gaming at lower resolutions like 1080p, the upgrade makes more sense. At 1440p, maybe a little, but not a significant jump, and at 4K, it may not be worth it.
If you do go for this upgrade, you'll definitely drop Intel, which is something many folks seem to value.
