I'm searching for a headless CMS that can cater to my project needs, specifically one that allows for the creation and moderation of a dynamic REST API. I've explored options like Strapi, Directus, and Payload based on AI recommendations and their popularity. However, these solutions require me to define a schema and input data before I can deploy, which won't be an option for my live development workflow. I need a platform that offers a REST API from the get-go and includes a web panel while granting me full flexibility for schema and data modifications after the project is built. Any suggestions?

What about WordPress? It might not be headless by default, but it can be configured to work that way. However, I understand it doesn't provide a REST API out of the box so you might need some additional setup.
You might want to look into Pocketbase. I have a boilerplate you could use to get started: https://github.com/magooney-loon/pb-ext. It's pretty handy for building out your API.
