Looking for Advice on a Simple Office PC Build

I'm looking to build a budget-friendly office PC for my mother, who mostly handles basic tasks like emailing, working on documents in Excel and Word, plus managing PDFs. My budget is around 500 to 800 euros just for the PC itself (excluding the monitor). I'm considering a 32:9 1440p monitor for multitasking convenience, but I need help picking the right components. I have a basic understanding of PC parts and would love some guidance.

I thought about using an Intel processor since I believe it would work fine for these simple tasks, but I'm open to other suggestions. The main requirement is integrated graphics, as dedicated graphics cards would be unnecessary. Here's the setup I'm considering:
- CPU: i5-12400
- Motherboard: Gigabyte B760M DDR4
- RAM: Kingston Fury 16GB (2x8) DDR4 3200MHz CL16
- Cooler: Tempest 120mm Black
- PSU: Corsair 650W ATX 80 Plus Gold Modular
- SSD: Kingston 1TB Gen4 6000MB/s
- I don't have specific preferences for the PC case, just that it fits all components.

The estimated total comes to about 750 euros. My goal is to make something simple yet fast and reliable. My mom currently uses a really outdated PC that is extremely slow, and I want to make her work life easier. I'm open to any advice on better products for my budget or completely restructuring my build, or if a pre-built PC might be a better choice for her needs.
