There's also a Gigabyte Gaming OC version for 619 euros, but I have concerns about its quality. Should I just go for the 2-slot GPU, or is the 3-slot worth the extra cost?

You probably won't notice much difference using a daisy-chained cable for power. Just go for the cheaper option, which is likely the 2-slot version. It should work great for your setup!
