I'm looking to upgrade from my 4750G to pair with my 9070 XT without jumping to AM5 just yet. I found the 5800X for about 140€ new, while the 5700X3D is around 250€ used if I'm lucky. My main goal is to enhance performance and reduce stutters in CPU-intensive games and to hold out until AM6 comes around.

If you're primarily gaming, the 5700X3D is the way to go. It really excels in gaming scenarios, unless you're tight on budget.
In your situation, I'd recommend the 5700X3D even if it costs more. Some titles take full advantage of the 3D V-cache, which can significantly improve your 1% lows. If you can snag one at a fair price, it might be worth the investment.
I totally get that the 5700X3D is superior, but paying almost double for a used one seems steep. If you mainly game at 4K, won't the 5800X still do a decent job for you?
