I have an Asus Astral 5080 that I purchased for $1800, and a PNY 5070 Ti that I got at MSRP for $750. I'm considering selling the 5080 for around $1500 and just using the 5070 Ti. I primarily game at 4K and would like to know if switching to the 5070 Ti is worth it given my situation.

If you're paying more than $999 for a 5080 now, that's crazy. The 5070 Ti is a much better value at the moment, just make sure it meets your gaming needs!
If the performance upgrade isn’t a big deal for you, I’d suggest sticking with the 5070 Ti for its value. The cost difference doesn't make sense when you consider the price of the ROG Astral.
It really comes down to whether you want to save that money or not. The 5080 does perform better for 4K gaming, but the difference might not justify the extra $1000 compared to the 5070 Ti.
Honestly, the 5080 is only about 10-20% faster and it has the same VRAM but costs way more. If you're focused on getting the most value, the 5070 Ti is the way to go.
It depends on your FPS goals. If the 5070 Ti meets your expectations, go ahead and sell the 5080. It might be worth it to cash in while you can.
