I've been thinking about upgrading my PC lately, but the rising prices of RAM have been a bit discouraging. I'm wondering if I should just upgrade my current setup with a new GPU or if I should wait and save up for an entirely new build. Right now, I'm using a Ryzen 9 5900X with an ROG x570 motherboard and a GeForce RTX 2070 Super.

Definitely go for the GPU upgrade. Unless you’re considering a major CPU upgrade like a Ryzen 7800X3D, you probably won’t see a big performance boost that’s worth the hassle.
I’d recommend upgrading your GPU! The 5900X is still a very powerful CPU, so you’ll likely see a solid improvement without the need to build a whole new PC.
That’s what I was thinking too, but these RAM prices are just wild!
