I currently have 2x8GB sticks of DDR4 RAM for a total of 16GB, and I want to upgrade to 32GB. Would it be better to add another matching 2x8GB kit, or replace my current memory with a 2x16GB kit? I was thinking four sticks might enable quad-channel memory and cost less, while two larger sticks might put less strain on the motherboard. What are the practical differences, and which option is more likely to be stable at the advertised speed?

Before buying anything, check your CPU and motherboard manual for the supported memory layout and maximum speed with four DIMMs. With DDR4, 4x8GB is often fine, especially at moderate speeds, but some systems need the memory speed reduced from the advertised XMP setting. Matching rank and timings can also help, although the exact kit model is preferable to relying only on the brand and headline speed.
The best practical choice is whichever option gives you reliable 32GB at a sensible price. If you already have decent DDR4 and can find a closely matching kit cheaply, adding two sticks is reasonable. If the prices are close, sell the current kit and buy a matched 2x16GB kit for simpler compatibility and better upgrade flexibility.
Adding another 2x8GB kit will normally run as dual-channel with two DIMMs per channel, not quad-channel. On a typical DDR4 consumer motherboard, four sticks can work perfectly well, but they put more load on the memory controller and may require slightly lower speeds or looser settings. If you go this route, try to match the existing kit's exact model, capacity, speed, timings, and voltage as closely as possible.
If the price difference is reasonable, 2x16GB is the cleaner option. Two modules are generally easier for the motherboard's memory controller to run at the rated XMP speed, and you still have two empty slots for a future upgrade. The performance difference is usually small, though, so there is no need to replace your current RAM if adding another matching 2x8GB kit is substantially cheaper.

Four modules aren't automatically a problem on DDR4, but mixing kits can be unpredictable even when the specifications look identical. There is always a chance the system will need manual BIOS adjustments.
