We're planning to replace our on-premises Microsoft Exchange server that currently handles around 200 mailboxes. Has anyone found any good alternatives to Office 365?

If you're set on avoiding Microsoft, Google Workspace is a solid alternative, although it may require some adjustment for users used to Exchange. Also, AWS WorkMail is quite basic but could work if you're only after email.
If you're looking for a different direction, GSuite is an option, but honestly, if you're already using Microsoft products, transitioning to M365 might be the smoothest path forward.

Why make your life more complicated? Just migrate to Office 365; it integrates well with Teams and keeps everything streamlined.
For a more traditional approach, you could go with Postfix combined with Dovecot to manage your mail server. You can add a webmail interface like Roundcube if you need it.
