I spent way too long creating a custom sensor panel using Rainmeter and HWINFO64. Honestly, it might be easier to set up a Prometheus exporter and build a Grafana dashboard since a lot of the standard options can feel a bit clunky.
RTSS works great when paired with HWINFO. It's a solid combo for tracking both FPS and system stats together.
