I’m trying to separate confirmed Java 27 changes from features that are still proposals or previews. What’s worth keeping an eye on?
What should we actually expect in Java 27?

Start with the official JDK 27 release notes for what shipped, then check each feature’s JEP for its status. A proposal or preview is not a promise that it will be final in this release. The discussion here doesn’t give enough detail to make a reliable feature list.

Value classes are the feature people seem especially eager to see, but being anticipated doesn’t mean they’re included in Java 27. I’d check the release notes before planning around them. If something you want is still in preview, expect to verify its exact status and any preview requirements for that JDK version.

So the release notes are the safer source than early feature roundups?

Right. Roundups can be handy for tracking possibilities, but the release notes tell you what made it into the release.
