I'm currently using an Intel i5-12400f along with an RTX 5080 OC. I just upgraded my GPU from an RTX 4060 and I'm considering upgrading my CPU next. I think I might be reaching my power limits, especially if I go with an i7-12700KF. How much wattage should I be looking for in a PSU? I was thinking about 1000 watts, but that seems like it might be overkill? Any suggestions would be greatly appreciated!

850W is actually fine for anything below a 5090. In fact, I’ve seen people run a 5090 on 850W PSUs partnered with AMD CPUs due to their lower power draw. According to PCPartPicker, a full i7-12700K and RTX 5080 system draws around 675W at peak, so 850W should definitely cover you without any issues!
PCPartPicker's numbers are based on TDP, which refers to heat rather than actual power consumption. The 5080 goes beyond 500W easily. You also have to factor in the i7's turbo power, which can push over 200W depending on how you set it up.
I’d recommend considering the 13th gen CPUs if possible. Going from a 12th gen i7 to a 13th gen i5-13600K could give you a noticeable performance jump in gaming, usually around 5-10% more.
My motherboard doesn’t support anything higher than an i7, unless I'm mistaken. I’ve got the B760-M.
