I have an older Dell laptop with 4 GB of RAM, a Core i5 processor, integrated graphics with about 2 GB of shared memory, and a 256 GB SSD. I'd like to install Linux and want something especially easy to use. A desktop layout with a Mac-like feel would be a bonus. My main goals are running RawTherapee and possibly GIMP for photo editing. Which distro and desktop environment would you recommend for this hardware?

Linux Mint XFCE would be a strong choice. It’s lightweight, beginner-friendly, runs smoothly on older hardware, and has excellent documentation and support. The default layout is closer to Windows than macOS, but XFCE is highly customizable, so you can move the panel and add a dock to create a more Mac-like setup.
You could install Mint XFCE and then add only the photography packages you need from Ubuntu Studio’s software selection. That gives you the lighter desktop while still making it easy to install useful media tools. Try a live USB first, make backups, and test Wi-Fi, graphics, and suspend before replacing your current system.
Most mainstream distros should handle those specifications, especially with a lightweight desktop. Fedora or Ubuntu using GNOME will give you a more Mac-like workflow, although GNOME may use more memory than XFCE. RawTherapee and GIMP both have native Linux versions, so you shouldn’t need to build your setup around Windows applications.
Elementary OS has one of the most Mac-inspired interfaces out of the box, so it may be worth trying if appearance is your top priority. Linux Lite is another simple option and includes helpful documentation, but check hardware compatibility before installing either one.
