I'm putting together a PC with a budget of roughly $1,000, though I can stretch it to about $1,200 if the extra cost is worthwhile. I'm mainly using it for gaming, homework, and some 3D modeling. I'm open to buying used parts from eBay if that would significantly improve the value. I was considering the budget Intel bundle because it includes a good amount of RAM, but I've heard concerns about the included motherboards. Which Micro Center bundle or overall parts combination offers the best value in the United States?

A setup using a Core i5-14400 or Ryzen 7 5700X, 32GB of DDR4, and a Radeon 9070 GRE could offer a well-balanced build for gaming while leaving room in the budget for the rest of the system.
If you’re buying only the CPU, motherboard, and memory bundle, a newer X3D-based platform with 32GB of RAM could be worth considering. Avoid paying extra for high-end boards unless you specifically need features such as USB4, since some models share PCIe bandwidth between the graphics card and M.2 slots.
The $500 bundle built around the 250K processor is probably the strongest value in this price range, especially if you still need to spend heavily on the graphics card and other components.
That’s the option I’m leaning toward too.
