I'm planning to replace my i7-8700K with a newer platform and would appreciate some upgrade suggestions. I'm considering an i7-14700K, but I'm open to changing the motherboard and RAM as well. My current graphics card is an RTX 3080 Ti, although I may upgrade that later too. The system will mainly be used for gaming and video editing. Should I stick with Intel, move to Ryzen, or consider a particular CPU and platform?

A 14700K would be a substantial upgrade for both gaming and video editing. Depending on your current memory, you might be able to keep DDR4 by choosing a compatible motherboard, though a new DDR5 platform would give you a cleaner long-term upgrade path. Your 3080 Ti should still be capable for another year or two, so I’d prioritize the CPU, motherboard, and RAM first.
If you’re replacing the CPU, motherboard, and RAM anyway, check for discounted CPU-and-motherboard bundles from major retailers. A bundle can make a newer Ryzen gaming platform or a current Intel setup considerably cheaper than buying every part separately.
If gaming is the main priority, the Ryzen 7 5800X3D can still be a strong value option, especially if you already have an AM4 motherboard and DDR4 memory. It’s less attractive as a completely new build than a newer platform, but it can save money in the right situation.
Anything from Intel’s 12th generation onward or AMD’s Ryzen 7000 series and newer would be a major jump from the 8700K. If you want to control costs, some Intel CPUs support both DDR4 and DDR5, but you must buy the motherboard that matches the memory type you plan to use.
