I'm planning to replace my current 120mm case fans because they produce an annoying low hum, even when running at relatively low RPMs. I'm looking for fans with strong cooling performance, a pleasant noise profile, and minimal buzzing or bearing noise. The Noctua NF-A12x25 G2 chromax.black and be quiet! Silent Wings Pro 4 are currently at the top of my list, but I'd appreciate some advice before spending that much. I'm also fairly new to choosing PC fans, so explanations about fan curves, airflow, and static pressure would be helpful.

Noctua is probably the safest choice if you care most about long-term reliability and avoiding strange buzzing or bearing sounds. For case airflow, you may not need extreme static pressure, so an Arctic P12 variant can make more sense if you want to save money. Just remember that perceived noise depends on the character of the sound, not only the published dB number.
I’ve had a very good experience with the Silent Wings Pro 4. They’re extremely quiet in normal use and still perform well when the system needs more airflow. They’re a strong option if you’re willing to spend more for a quieter overall experience.
They also work well on radiators. I replaced the fans on my liquid cooler with Silent Wings Pro 4 models and got better temperatures with less noise than the stock fans.
For a premium setup, also consider the Phanteks T30-120, assuming your case has enough clearance for their thicker frame. If you want the best value, Arctic P12 Pro fans are hard to beat, especially if you buy a multipack. They can move plenty of air at low speeds, though their sound becomes more noticeable when they ramp up.
If your budget allows, the Noctua NF-A12x25 G2 and Silent Wings Pro 4 are both excellent choices. Noctua tends to have the most refined noise profile, not just a low advertised decibel rating. The Arctic P12 Pro is a much cheaper alternative and offers impressive airflow for the price, but it may need a custom BIOS fan curve to keep it from ramping up loudly.

That’s my concern with some Arctic models too. They’re fantastic value, but certain RPM ranges can produce a noticeable hum or buzz. Setting a gentle fan curve usually helps keep them in the quieter range.
