I'm debating between getting an Intel Core i5-13400F or an AMD Ryzen 5 7500F to pair with my RTX 5070/5070 Ti. I'd also like some advice on whether I should invest in an Intel Core i7 or stick with AMD. My goal is to play new games like Red Dead Redemption 2, Cyberpunk 2077, Bodycam, and Ready or Not at high or max graphics settings on 1440p or 4K resolution.

Honestly, the RTX 5070 Ti is a beast for 1440p and 4K. If your budget allows, it's worth the extra cash since it'll last longer. I’d recommend the AMD 7600 or really go for the 7800X3D; better CPUs just mesh well with the 5070 Ti. The 13400F or the 7500 would work fine too, but if you're planning long-term, think about future needs since 12GB of VRAM may not be sufficient soon. And for Cyberpunk, even a 5080 can struggle at 4K max settings! High settings will do nicely though, so don't stress too much about it.

I'm looking to spend around 5000-6000 PLN for the PC. Any tips?

For pure gaming, the Ryzen 5 7500 is slightly better. If you're looking primarily for gaming performance, this could be the way to go!

Definitely lean towards AMD. You can expect to upgrade your CPU until 2028 or so. The last LGA 1700 socket CPU was released just this year, so Intel's path is already getting narrow. If you can stretch your budget, consider the 7800X3D since it will offer a significant boost.

I'd say go with the AM5 platform. It's got better performance overall, plus you'll have an upgrade path for future chips, while Intel doesn't offer that. The 7500F is a decent choice for budget builds and should work just fine with your GPU.
