I recently had my RX 6800 XT fail on me, and I'm in the market for a new graphics card. My setup includes a Ryzen 5 5600 processor and 32GB of HyperX Fury RAM paired with a B550M DS3H motherboard. I'm considering the 9060 XT since it has 16GB of VRAM and isn't much more expensive than the 5060 Ti with 8GB. However, I'm wary of getting another AMD card after my last experience. What do you recommend?

You should really consider your budget and what resolution you'll be gaming at. If you're aiming for 1440p, the 9060 XT is a good option, especially for around $440. If you want something even better, check prices for the 4070 Super or Ti—though they'll be around $100-$150 more.
I think the 9060 XT with 16GB is a solid choice! I've had my share of ATI/AMD GPUs that failed, but I still keep buying them. The performance for the price is hard to beat! Just make sure you check if you're getting the right version since there's also an 8GB variant.
