I used to rip audio CDs regularly on Windows, but I'm now using Ubuntu on a laptop from around 2012 and need to start ripping again. I've found several Linux ripping programs, but I'd prefer one that can automatically identify the album, create an album directory, and save the ripped tracks inside it. Which applications handle this well and are reasonably easy to use?

Asunder is a good choice on Ubuntu. It has a straightforward interface and can organize the ripped tracks into folders using the album and artist information.
You could also try Whipper if accurate, bit-perfect ripping is important. Asunder is easier for a typical desktop workflow, while Whipper focuses more on verification and secure extraction.
For something simple with a graphical interface, Asunder is probably the better starting point. Whipper is especially useful when you want carefully verified rips.
