I'm trying to decide between two PC builds for 1080p gaming and some medium Photoshop work. Both builds are in a similar price range, but I'm curious about which would offer better performance for gaming. I primarily enjoy single-player games, including titles like Borderlands 3, Doom Eternal, Cyberpunk, and various Soulslike and JRPG games. Additionally, I use Clip Studio Paint and Photoshop for drawing. Here are the two builds I'm considering:

I'd go with Build 2! Even though the GeForce RTX 5060 has less VRAM, it generally performs better for productivity tasks than the Radeon 9060 XT. Plus, the faster DDR5 RAM is a great boost for both gaming and Photoshop. 8GB is usually plenty for 1080p gaming on ultra settings, so you should be all set!
If you can, check out YouTube for comparisons on the 9060 XT's performance in the programs you plan to use. In gaming, I'd lean towards the 9060 XT, but for productivity, the NVIDIA card has its advantages, especially with rendering and Photoshop tasks.
