Total estimated cost is around $1018.88. Also, I'm a bit puzzled about the 65 mm depth clearance for the radiator—what does that mean? Thanks in advance for any suggestions or adjustments to my build!

The 65 mm depth clearance is all about fitting a radiator for water cooling. Typically, a radiator is around 30 mm thick, and you'll need to add about 25 mm for fans, so you'd need around 55 mm clearance for standard setups. But since you’re using an air cooler, you don't have to worry about that at all! Your build looks solid, I especially like the choice of the Fractal case for a minimalist vibe.
The radiator depth is essentially how much room you have if you decide to use an AIO water cooler in the future. It won't affect you now since you're going with a traditional air cooler.
