I'm thinking of setting up a mini PC with Linux to use with my TV. I'm curious about which Linux distributions would be suitable for this purpose. Any suggestions? Thanks!

Are you looking to use Kodi specifically, or do you want a gaming distro? That could influence your choice a bit.
Remember, a TV is just a display. What exactly are you planning to do with it?
If you plan on using Kodi, it works great on any distro you choose. Just pick one you're comfortable with and go from there.
For a DIY approach, I recommend Debian Stable. It requires less maintenance than a desktop version. However, if you're after something plug-and-play, try LibreElec or OSMC. They’re designed for running Kodi, with LibreElec being the most user-friendly and popular. OSMC is based on Debian and is better if you want to do more than just stream media.
Debian would be a great fit. It's stable and secure according to many users.
I have a similar setup for my home theater. Stick with a distro you know well; it makes things easier!
