I'm currently several updates behind on my iOS (still using version 17.4.1). If I decide to update soon, will I have the option to install an older version instead of jumping to the latest release? Or am I stuck updating to the most current version only?

Unfortunately, you can't select an older version to update to after a new one is released. Apple usually stops signing older versions about two weeks post-release, meaning you'll have to update to the latest version available for your device. For instance, if you wanted to go to a version like iOS 17.7.7, you had to do it at the time of that release. Now, your device will only allow the latest iOS.
Just a heads up, I read from Reuters that new age verification features are included in the latest iOS update. So, if you're looking to avoid that, unfortunately, updating to an older version isn't an option.
