I'm trying to update my iPad to version 18.7.7, but the update keeps failing. I see that my device allows me to try this update, but I'm wondering if I could use my computer to successfully install it instead. Will that work, or will it fail because the version isn't signed or something?

You can technically try to update your iPad using a computer. However, I'd recommend considering an update to iPadOS 26.4 instead. It's generally better to stay updated if you can, as it brings new features and security enhancements.
Unfortunately, it seems like iPadOS 18.7.7 isn't available as an IPSW file, so you won’t be able to update to that version using your computer. It looks like it was signed recently, but it's not available anymore for direct installation. You're likely stuck unless Apple re-signs it again.
