HDR seems to be affecting games that don't support it, including Isle and Dead by Daylight. Screenshots and recorded clips look badly washed out or oversaturated, and disabling HDR in the system settings makes the games look extremely desaturated while they're running. This wasn't happening before, and Auto HDR is already turned off. Could something else, such as the game capture software or monitor settings, be forcing HDR on?

It could be an automatic HDR mode on the monitor, but since the screenshots and clips are also affected, the problem is probably happening in the operating system or capture software rather than only on the display.
Check the game capture software, especially the Game Bar installation. In one similar case, Game Bar had been removed or corrupted, and reinstalling it fixed the incorrect HDR behavior.
That was my thought too—the captured images are affected, so it doesn’t seem like a monitor-only setting.
