I'm looking to disable all phone tracking on my iPhone to ensure that there's no record of my travels. I've turned off most settings, except for location services that allow my spouse to track me. Is this enough to meet my goal? Should I check anything else? And will sharing my location with my spouse work against my efforts to stop tracking?

You might want to consider why you're trying to hide your location. If it's just for privacy on a trip, discussing this directly with your spouse might be a better approach than trying to outsmart your phone's settings. Just a thought!
If you have Find My enabled, that will track your location regardless of other settings. So, if you're sharing your location with your spouse, it's likely that Find My is active. You might want to double-check that setting to be sure. Also, make sure your sharing settings are as you want them, otherwise, you could be sharing more than you intend.
Regardless of what you do, there's always a chance of tracking unless you go to extremes, like putting your phone in a Faraday bag or turning it off completely. Even if you disable tracking in settings, your carrier knows your approximate location to connect calls.
Just so you know, even without Find My, your phone might still collect data. If you really need to hide your location, consider turning off location services completely. But remember, if your spouse has access, they might still see your location. They could always find a workaround. Think about what you're trying to achieve here.
