Additionally, I've changed my Google password and checked my login activity, finding no suspicious access. My concern is whether it's possible for someone to create an account just using my email, or does this indicate they might have had access to my Google account?

You only need an email address to register for services like that. Companies usually require you to confirm your email by clicking a link, which helps verify access. Since you've changed your password, you should be fine! Just a heads up, enabling two-factor authentication on your Google account can add extra security.
