I'm finally making the leap from a 4060 Ti to a new 5070 Ti, and I'm currently using an i5-13600K. I'm wondering if I should upgrade to an i7-14700K now, or if I can stick with my current CPU until I eventually switch to AMD. How much performance am I really losing by keeping the 13600K?

Your i5-13600K is still pretty powerful! It really depends on your gaming setup—what games are you playing and at what resolution? You mentioned aiming for 180 FPS at 1440p, so that could affect your CPU's performance a bit. But overall, it's still a solid choice for most games.
I'd hold off on the CPU upgrade. The performance gain isn't worth it unless you're looking for some very specific benchmarks. Just wait for AM6 and consider moving to AMD as you mentioned.
If you're gaming above 1080p, the 13600K is more than capable. Most games won't see a significant improvement with the 14700K. Save your cash for a better GPU or a high-quality monitor instead!
