I just checked my Gmail on my phone and my inbox is completely overwhelmed with new account setup emails from tons of different websites. In less than 15 minutes, I've received over 250 of these emails. A weird thing is that the first three letters in the email addresses are separated by '.' characters. Besides just deleting them, is there anything else I could do to handle this situation?

You should definitely report them as spam. It's a straightforward way to handle it, and it helps improve the spam filters for everyone.
Another option is to report those sketchy email addresses. Just click the three dots next to the reply button and select 'Report phishing.' I get a ton of these too, and my email isn’t listed on haveibeenpwned, so it seems like my info got leaked somehow.
I'd consider reporting them if it were only a few, but I'm already at 762!
