I've got my Windows updates paused because it feels like I don't really own my laptop anymore; it just updates whenever it wants. I came back to my PC after it rebooted for one of those annoying updates last night. Is there a way to stop these updates without having to switch to a new operating system and deal with all the compatibility headaches?

Why not just let it update? The latest version is usually the best. If you’re worried about interruptions, you can disable updates, but I’d recommend doing them manually every now and then. Trust me, I’ve been in IT for 10 years; keeping Windows up to date is important.
The updates are a pain, but they're there because some people never install them and then complain when their systems get infected. You can go to services.msc from the run command and disable the Windows Update service if you really want to stop updates entirely.
