I'm looking to upgrade from my 1660 Super to a 5070 Ti, but I have a Ryzen 7 3800X as my CPU. I'm worried about whether it'll bottleneck the new graphics card. What's the general consensus on this?

Oh yeah, trust me. The 3800X is slightly better than my old 3700X, and I found it really held back my 3080. You’ll definitely want to upgrade your CPU if you go for the 5070 Ti.
