I'm currently using a B350 motherboard with a Ryzen 5 2600X and a GTX 1060 6GB. I built this machine back in 2018, and I've been contemplating an upgrade to AM5 for a while now. However, with prices skyrocketing lately, I'm leaning towards sticking with AM4. I need to replace my motherboard, CPU, PSU, and GPU. What do you all recommend?

You could definitely stick with AM4; there's room for upgrades. I'd recommend adding another 16GB of RAM and considering a Ryzen 5600 (regular or X, whichever you find for around 100 euros). You may not need to change your motherboard if you update the BIOS. Spend the remainder of your budget on a new GPU and power supply if needed.
What’s your budget and location? Do you have access to a Microcenter? Also, what do you mainly use your PC for? It can help narrow down your options!
What’s your current RAM situation? If you have 16GB or even 32GB, it could be worth looking into a 12th-14th gen Intel CPU instead.
It really depends on what you use your PC for. Personally, I'm quite content with AM4 for the next several years, especially since I have a Ryzen 5800X3D, which is the top dog for that socket. If you can't snag one of those or the 5700X3D, then maybe upgrading to AM5 could be worthwhile for you.

I'm from Serbia, unfortunately, no Microcenters around here! I mainly use my PC for gaming at 1080p and some emulators, looking at a budget around $800-860.
