I'm looking to repurpose my old Xbox One by installing Windows 10 on it, as I have another one for gaming and this one is just sitting idle. I'm hoping to use it as a workstation specifically for 3D graphics work. Is this even possible?

Unfortunately, you can't convert an Xbox One into a regular computer. The system is pretty locked down, and you'll face serious limitations, especially for running 3D graphics. It's not going to work like you might hope.
