I recently got some cable extensions, but I only received one 6+2 pin cable, along with an 8-pin extension cable. I'm wondering if I can use both of them simultaneously on a 9070 XT. Additionally, should I use a 600W pigtail cable with these extensions?

I'd recommend avoiding extension cables altogether. If something goes wrong, like overheating, you might be stuck with the repair costs since neither your power supply nor your GPU manufacturer will cover issues caused by third-party cables.
Is it possible to just switch out the cables for white ones?
